Once a week or so, I take a few minutes for myself in the morning. After the boys go to school and before the babies wake, I make myself breakfast and eat it at the table in silence. I have never been a lover of sweet breakfasts. I need salt and protein to get me through the morning. This little setup only takes a few minutes to prepare, and it’s like a healthy homemade version of an Egg McMuffin.
Momma’s Signature Breakfast
what you need:
one or two eggs
a splash of milk
a sliver of butter
a slice of toast
a piece of turkey
drop the sliver of butter into a glass measuring cup.
beat the eggs and milk in with a fork, adding salt and pepper.
microwave (that’s right) for increments of 20 seconds, checking it often.
it poaches it in a clean/fast/magic way.
i serve it on a piece of toast with a slice of turkey (and lots of mustard).
i also include a glass of iced coffee with milk or heavy cream.
Chris finally participated a few weeks ago. He liked it with cheese.
